The “Before” phase of making Fig, Peppercorn & Thyme jam.
Saturating the figs with the sugar during an overnight, breaks down the figs and lets all the fluids out, which in turn shortens the cooking process to a mere 1-2 hours.
The combo of thyme and peppercorn intensifies the natural flavor of the figs, and gives a strong ‘bite’ to the jam.
